Sauteed Crab Cakes

Yields 6, 3 oz Crab Cakes.

Ingredients for Lemon Thyme Tomato Relish

9 oz diced Tomato
1/2 minced Red Onion
1 pinch minced Jalapeno
1 pinch Lemon Thyme
1/2 oz Balsamic Vinegar
1 1/2 oz Olive Oil
1 dash Dijon Mustard
Salt & Pepper to taste

Ingredients for Crab Cakes

2 oz Olive Oil
9 oz Tomato Relish
1 1/2 oz Balsamic Reduction
3 pinch chopped Chives
6 Crab Cakes

Method for Lemon Thyme Tomato Relish

• Mix all ingredients and let sit for 1 hour.

Method for Crab Cakes

• Put 2 oz olive oil in a sauteed pan.
• Saute crab cakes until golden brown on both sides.
• Finish in oven until heated through.
• Place on three dishes 1/3 tomato. Place two crab cakes on each plate.
• Drizzle balsamic reduction around crab cakes.
• Garnish with chopped chives.
