The King’s Kitchen Banana Pudding

Serves 6

Ingredients for Banana Pudding

1 ½ cup Sugar
½ tsp Salt
½ cup All purpose flour
6 cup Milk
6 ea Egg yolks
3 Tbsp Soft butter
4 tsp Vanilla
25g Banana compound
1 Banana, thinly-sliced

Ingredients for Vanilla Wafer Cookies

230g Butter, soft
400g Sugar
2 ea Eggs
30ml Vanilla
330g All purpose flour
6g Baking powder
2g Salt

Ingredients for Vanilla Meringue Frosting

4 oz Egg whites
5 ¼ oz Sugar
1 tsp Vanilla extract

Method for Bread Pudding

Cook sugar, salt, flour and milk over low until slightly thickened.
Add hot milk mix to the egg yolks, butter, vanilla and banana compound. Cook until thick.
Pour pudding into pan and allow to cool.
Place a layer of The King’s Kitchen wafer cookies in the bottom of a glass (recipe below)
Layer thinly-sliced bananas on top.
Top with a 2oz scoop of pudding.
Repeat the three layers once more.
Top with meringue to order. (recipe below)

Method for Vanilla Wafer Cookies

Cream together butter and sugar
Add eggs and vanilla slowly
Add flour, baking powder and salt and mix to incorporate
Scoop using small cookie scoop onto cookie sheet and flatten loosely.
Bake at 300-325 for 10-12 minutes, or until golden brown.

Method for Vanilla Meringue Frosting

Heat sugar and whites, stirring constantly, over a double boiler until warm and sugar is dissolved.
Whip on full speed until stiff peaks form.
Drizzle in Vanilla extract as it whips.
