40 oz Heavy Cream
2 bunches White Asparagus
1 each Parsnip
1 each Leeks (white part only)
1 T White Truffle Oil
4 Cloves, chopped
3 sprigs Fresh Thyme
1 bulb Celery Root
1 T Olive Oil
1 t White Truffle Butter
1/4 c White Wine
2 c Chicken Stock
bunch Fresh Chives


  • Cut all vegetables in small dice.
  • In a large sauce pan blend olive oil and truffle oil together.
  • Sauté the vegetables until tender,however, do not brown vegetables.
  • Add white wine and reduce by half.
  • Add heavy cream and chicken stock. Let simmer for 20 minutes.
  • With a hand held blender,puree and strain through a cheesecloth.
  • Place soup on stove and reduce by one third.
  • Whip in truffle butter, serve and sprinkle with fresh chopped chives.
