Tomato Basil Bisque

Ingredients for Tomato Basil Bisque

4 tbsp Butter
1 tbsp Garlic, fine diced
1/2 Mirepoix
2 lb Canned Italian Plum Tomatoes
1/2 quart Heavy Cream
1 cup Basmati Rice
8 oz Salt
2 oz Pepper
1 tbsp Basil
1/2 cup fresh Chevre (Goat Cheese)
• Salt and Pepper, to taste

Method for Tomato Basil Bisque

  • Sweat garlic and mirepoix (equal parts, fine diced onions, celery and carrots) in butter until translucent.
  • Add tomatoes and bring to boil.
  • Add rice and reduce heat and simmer 30 – 45 minutes. Add cream, return to slow simmer.
  • Puree until smooth, being careful not to over process.
  • Add basil and let set 10-15 minutes to allow basil flavor to blend.
  • Dollop with fresh Chevre. Garnish with bruschetta or crostini.
