Pesce Arrosto alla Mediterranean

Ingredients for Pesce Arrosto

1 ea 1 1/2 to 2 lb whole Branzino scaled, gutted
1 ea Zucchini julienne
1 ea Yellow Squash
1 ea Eggplant julienne
1 ea Fennel julienne
1 ea Red Peppers
1 ea Yellow Peppers
1 bunch Basil Leaves

Method for Pesce Arrosto

• Preheat oven to 450º,rinse fish with cold water then dry inside and out
• Season fish with salt and pepper
• Mix all ingredients and place under the fish
• Add a liberal amount of white wine and E.V.O.O. in with the vegetables for moisture when cooking
• Make sure the fish is on top of the vegetables and wine mixture
• And bake for 10-12 minutes
• Serve fish on platter with fresh lemon and great olive oil
