Stinco d’ Agnello (braised lamb shank)

Ingredients for Stinco d’Agnello

4 Lamb Shanks (14 oz each) 1 Carrot (chopped)
1 Celery Stalk (chopped)
1 medium White Onion (chopped)
1 clove Garlic
1 cup Red Wine
1 tbsp Tomato Paste
1 Bay Leaf
1 pinch Salt & Pepper
1 cup Flour
4 cups Water
1 tbsp Olive Oil

Method for Stinco d’Agnello

  • Dust the lamb shanks with flour, salt, and pepper.
  • Sear in a pan over medium heat until nice and golden brown.
  • In a large cast iron pan, heat olive oil, vegetables, garlic, tomato paste, bay leaf, red wine, and lamb shanks over medium heat until alcohol evaporates (several minutes).
  • Cover all with water, and slow braise (low heat) for four hours.
  • Transfer to a 325º oven and cook again for a minimum of 4 more hours.
