Pan RoastedAlaskan Halibut Fillet with Morels, SpringVegetables andMorel Jus

2 T olive oil
1/8 C morel mushrooms, fresh or rehydrated
1 oz green beans, blanched and sliced
1 oz yellow wax beans, blanched and sliced
1 oz asparagus, blanched and sliced
2 T English peas, shucked and blanched
2 oz vegetable stock
1 T unsalted butter
1 oz morels jus
to taste salt and pepper


• Heat a sauté pan until almost smoking, season fish with salt and pepper.
• Add 1 tablespoon olive oil to the pan and carefully add fish, sauté until brown and then turn and continue to cook approximately 2-3 minutes total, remove when medium.
• In the same pan add the remaining oil and all of the vegetables, sauté briefly and then add stock and butter.
• Reduce heat to low and season with salt and pepper.
