Goat Cheese Bruschetta with HerbedTomato



grape tomatoes
rosemary, minced
thyme, minced basil, hand torn
goat cheese
shallots, finely diced
flat leaf Italian parsley
to taste olive oil
to taste salt and pepper

• Halve grape tomatoes
• Dust with salt, pepper, sugar, minced rosemary, minced thyme and hand torn basil.
• Drizzle with olive oil and bake at 350 degrees until tomatoes start to shrivel but still have their juice.
• Toast your favorite rustic bread with olive oil and salt.
• Mix equal parts goat cheese and mascarpone cheese with finely diced shallots and flat leaf Italian parsley, salt and pepper.
• Spread goat cheese mix on toast and top with tomatoes and bake until hot.
