Filet Gorgonzola

INGREDIENTS:

4 1/2 pound filet mignons
2 small shallots
1 T green peppercorns
1/4 C white wine
1/2 C crumbled gorgonzola cheese
1 Q heavy cream
cornstarch
salt
white pepper

METHOD: FILETS

• Grill filet mignons to desired temperature.
• About 1 minute before the end of cooking,top filets with crumbled gorgonzola to melt.
• Serve with gorgonzola sauce (below).
