Irish Potato Soup


Serves 8-12

Ingredients for Kevin Barry’s Irish Potato Soup

5 lb Potato, peeled & sliced
1 can Chicken Broth
1 Yellow Onion
1 qt Milk
¼ lb Butter
1 cup All Purpose Flour
1 tbsp Chicken Base
¼ tsp Accent
Leeks, to taste

Method for Irish Irish Potato Soup

• Melt butter in a saucepan. Add flour.
• Add heated milk,mix well, then add the chicken base. Whip until thick.
• Add chicken broth, onions, accent and potatoes.
• Simmer for 30 minutes.
• Add leeks to taste.
• If too soup becomes too thick, add chicken broth to thin the mixture.
