Sweet Potato Soufflé


Serves 8-10

Ingredients for Sweet Potato Soufflé

4 lbs Sweet Potatoes
1 tsp Salt
1½ cups Sugar
2 Eggs
½ cup Raisins
1 Lemon, grated rind and juice
½ tsp Nutmeg
½ cup Evaporated Milk
½ cup chopped Pecans
1 stick Butter or Margarine
½ cup Shredded Coconut

Method for Sweet Potato Soufflé

• Slice potatoes and boil in salted water to cover potatoes. Cook until tender.
• Mash and whip potatoes, mix all ingredients and pour in greased casserole dish, bake in oven at 350º for 30 minutes.
• Cover the top with marshmallows just before removing from oven. Brown and serve.
