Squash Casserole

Ingredients for Squash Casserole

4 lbs Yellow Squash, sliced
1 medium Onion
1 tsp Pepper, 1 tsp Salt
2 cups Cornflakes, crushed
¼ cup Butter or Margarine, melted
1 10 ½ oz can Cream of Mushroom Soup
1 cup grated American Cheese

Method for Squash Casserole

• Pre-heat oven to 350º.
• Combine the squash and onion in a saucepan. Pour in some salted water and cook over medium heat for about 20 minutes.
• Drain and mash.
• Add the pepper, salt, cornflakes, margarine, and soup and mix.
• Place in baking dish and cover with the cheese. Bake for 20 minutes.
