Ingredients for Southern Greens

1 cs Collard Greens
1 cs Turnip Greens
1 cs Mustard Greens
5 lb Smoked Ham Hock
2 lb Fat Back
1 cup Bacon Grease
6 ea Yellow Onion, julienned
1 cup Worcestershire Sauce
1 lb Dark Brown Sugar
2 qrts Red Wine Vinegar
½ cup Tabasco® Sauce

Method for Southern Greens

• Clean and wash greens well.
• In a large stock pot, render fat back. Add bacon grease and sauté onions.
• Add 2 gallons of water and ham hocks, simmer for 1 hour.
• Add the rest of the greens and more water to cover greens ⅔ of the way.
• Add all the other ingredients and let cook until greens become tender.
• Add salt and pepper as needed. Adjust vinegar, sugar, and Tabasco® as desired.
