Ingredients

10 oz Chilean seabass
2 1/2 oz Pinot Grigo wine
1 t garlic
capers
sundried tomatoes
pinenuts
to taste salt and pepper

To Finish

  • Place fish on top of steamed julienned carrots and zucchini, then top with sauce.

    Method

  • Dust a 10 oz Chilean seabass fillet with flour.
  • Add salt and pepper.
  • Heat pan with olive oil. Saute fish on both sides until brown.
  • Add 2 oz Pinot Grigo wine or any dry wine.
  • Put pan in preheated 350 degrees oven and cook for 10 minutes or until done.
  • Remove fish from pan and add 1/2 oz of wine and one teaspoon of garlic.
  • Cook for two minutes.
  • Add capers, sundried tomatoes, pinenuts and simmer.
