SALMONE alla genovese (Roasted Salmon with Basil Pesto Cream)

Yields: 4 servings

Iingredients: Pesto Cream Sauce

1/2 C basil pesto (see recipe below)
1 C heavy cream

Ingredients: Salmon

4 (5-6oz) skinless salmon fillets (each about 1 3/4 inches thick
1/4 C extra virgin olive oil
to taste salt and pepper

Method: Pesto Cream Sauce

ingredients: Pesto Cream Sauce 1/2 C basil pesto (see recipe below) 1 C heavy cream • In a saucepan, whisk together the pesto and cream. • Heat thoroughly, but do not boil. • Season with salt and pepper to taste.

Method: Salmon

  • Preheat oven to 400ºF.
  • Line a large baking sheet with foil.
  • Rub salmon all over with olive oil and season with salt and pepper.
  • Roast salmon until opaque in center, about 10 minutes.
  • Transfer to a platter and spoon with pesto cream sauce.
  • Garnish with fresh basil and lemon.
  • Grill Option: Grill seasoned salmon fillets to desired doneness (as prepared at Papa Mio’s).

    Ingredients: Basil Pesto

    1 C fresh basil
    1/4 C pinenuts
    1/2 C olive oil
    2 T chopped parsley
    2 garlic cloves
    1/4 C romano cheese

    Method: Basil Pesto

  • In a food processor, puree the above ingredients until smooth.
  • Season with salt and pepper to taste.
  • Pesto may be made 2 days ahead and refrigerate, it’s surface covered with plastic wrap.
