Salmon Chipotle

Yields: 2 servings


1 salmon filet (8oz)
1 C cream
6 oz Chardonnay
3 oz sundried tomatoes
6 basil leaves, julienned
1/8 T salt
1/8 T pepper
1/2 T chipotle
1 oz canola or olive oil


  • Place oil in pan. Saute salmon filet and add salt and pepper on side.
  • Turn over salmon filet and bake for 10 miuntes at 500 degrees F.
  • Remove salmon and place in sealed container.
  • Pour wine, cream and remaining ingredients in the pan to make the sauce. Boil and reduce until desired consistency/reduction is achieved.
  • Pour sauce over salmon filet and serve.
