Spring Rolls with Honey-Cilantro Pesto

Ingredients Spring Rolls

10 large won tons skins (available in deli section at most markets)
2 cooked chicken breasts, sliced 1/4-inch thick and dusted with Cajun seasoning
2 C mesculum (baby greens), chopped
1/4 C water
2 C cooking oil

Ingredients Honey-Cilantro Pesto

2 bunches cilantro de-stemmed
1/2 C pine nuts
1/4 C seasoned rice-wine vinegar
1/2 C olive
2 T garlic
3 dashes Tabasco
1/4 C Parmesan
2 T honey

Method Spring Rolls

  • Lay the won ton skin flat on a cutting board with a tip facing you (diagonally).
  • Place a couple strips of chicken in the middle of the won ton wrapper and about 2 tablespoons of chopped greens.
  • Fold the left and right edges of the won ton wrapper in over the chicken, then fold the flap closest to you up over the chicken like an envelop; wet the remaining flap with water by dabbing with finger, then roll up the spring roll over the remaining flap.
  • Fry the spring roll in oil until golden brown.
  • Cut into thirds and serve in a pool of the cilantro pesto.

    Method Honey-Cilantro Pesto

  • Place all in a blender or cuisinart and blend until smooth.
  • Heat and serve with spring rolls.
