White Wine Mussels


Serves 1

Ingredients for White Wine Mussels

1 lb Prince Edwards Island (PEI) Mussels
2 oz Oil
½ cup White Wine
1 tbsp Garlic, minced
1 cup Heavy Whipping Cream
1 tbsp Parmesan Cheese
Salt & Pepper, to taste
Chopped Parsley
Lemon Wedge

Method for White Wine Mussels

• Clean mussels (remove any rope or open/dead ones).
• In a sauté pan heat oil and garlic until soft.
• Add mussels and white wine, reduce until one third of the liquid is left.
• Add heavy cream and reduce until one quarter is left.
• Add parmesan cheese, salt and pepper; toss to incorporate all mussels, cream sauce and cheese.
• Place in large pasta dish.
• Garnish with chopped parsley, lemon wedge.
• Serve with toast points (crostinis).
