Smoked Turkey Hash

Yields 10 1-cup portions

Ingredients:

3 lb. smoked turkey (shredded)
3 lb. blanched potato (shredded)
1 medium onion minced
salt, pepper & garlic to taste

Method:

1. Combine turkey, potato & onion in large bowl. Add seasons as desired. Cover and refrigerate over night.
2. In a medium sized non stick pan heat 1 oz olive oil over medium high heat. Add hash mixture in 1 cup portions brown on both sides.
3. Serve with eggs prepared any style.
