Quince Stew


Serves 4–6


2 large quince
½ Tbsp. cinnamon
4 Tbsp. butter
¼ tsp. nutmeg
1 lb. black angus beef chunks or ground beef
2 Tbsp. sugar
1 large onion (finely chopped)
⅓ c. yellow split peas
1 tsp. salt
2 c. water
½ tsp. pepper
2 Tbsp. lemon juice


1. Wash, core and cut the quince and slice as for apple pie.
2. Sauté quince in butter in a 2 quart pot.
3. Add meat, onion, seasoning and sauté on medium heat until the meat is browned.
4. Add water, lemon juice, and sugar to meat and let simmer for 30 minutes on low heat.
5. 25 minutes before serving add yellow split peas and continue cooking.
6. About 15 minutes before serving add sated quince to the meat and let simmer on low heat.
7. Served over rice or pita bread.
