Seared Tuna



4 oz. fresh sashimi grade tuna
1 Tbsp. shichimi pepper
1 oz. pickled sushi ginger small julienne
1 oz. fried onion julienne
2 oz. Ponzu sauce
4 oz. shredded cucumber
Parsley for garnish


1. Dust shichimi pepper on the tuna both side.
2. Cook tuna on the flat top grill or sauté pan just seared in high heat.
3. Mound shredded cucumber middle of the plate, apply thinly sliced tuna around the cucumber.
4. Put julienne pickled sushi ginger and julienne fried onion on the tuna each pieces.
5. Pour Ponzu sauce and parsley for garnish.
