Texas Stuffed Roasted Quail



2 semi-boneless quail
1 lb. ground ribeye
2 oz. meat rub spice
5 oz. water
½ Tbsp. salt
1 oz. white vinegar


1. Mix ingredients in large mixing bowl. Use this mix to stuff two 7-8 oz. quails.
2. Pan sear the quail top and bottom in hot skillet to crisp skin.
3. Baste brush a BBQ sauce spiced with chipotle pepper. 4. Finish cooking in oven at 450 degrees for about 8-10 minutes or until internal temp reaches 150 degrees.
5. Garnish with goat cheese and micro greens and serve while hot.
