Vanilla Tres Leches


Serves 8–16 per cake


8 eggs
1 lb. sugar
20 oz. flour
2½ soupspoons baking powder
3 oz. vanilla flavor
6 oz. milk
4 oz. pecan pieces
2 pints of chopped pecans for garnish


1. In a mixer, pour egg whites and mix at medium speed until stiff. Add sugar and mix for 2 Minutes. Add yolks and mix for another 2 minutes. Add flour, baking powder, milk and vanilla. Mix for one minute and add pecan pieces.
2. Pour mixture into two greased nine inch round cake pans and bake for 45 minutes at 375°.Mix 3 cans evaporated milk and 3 cans condensed milk to make cream to pour over top of cake Pour this mixture over the top of cake until it is completely soaked. Should take about 1 quart for each cake.
3. Add pecans on top of cake for garnish.
