Pizza Dough


Ingredients for Pizza Dough

1.5 gal Water
1 Tbsp Yeast
1 C honey
1 C Sugar
1 C olive oil
1 C salt
20 lbs AP flour
1 lb Semolina

Method for Pizza Dough

• Pour one gallon of hot water in the mixing bowl. Measure another 1/2 gallon of warm water (90 - 100 degrees) in a separate container and add the yeast and mix well, sset aside.
• Add the sugar, salt, oil and the honey (in that order) to the mixing bowl and whisk by hand until well mixed in the water. Add the flour and then the semolina to the bowl. Pour the yeast water in last. With a dough hook beat the mixture on low for 5 minutes (the sides of the bowl should be clean with out any dough sticking to the bowl). Transfer the dough to the work surface, knead into a large ball, cover with plastic (a trash bag works well since the dough will expand) and let rise for about 30 minutes.
• Portion and knead individual portions into balls and refrigerate for at least 4 to 6 hours.
