Sarki’s Omelet

Ingredients for Sarki’s Omelet:

3 Eggs
2 oz. Spinach
2 oz. Onions
2 oz. Mushrooms
1 oz. Kalamata Olives
1 oz. Feta Cheese

Ingredients for Crème Fraiche:

1 cup whipping cream mixed with 2 tablespoons buttermilk.
Combine well in a glass jar and cover.
Let stand at room temperature (about 70 degrees F.) for 8 to 24 hours, or until thickened.
Stir well and refrigerate
