INGREDIENTS:

7oz. Salmon Filet
Spinach
Honey
Piq. Alioli
Tom.
Figs
Sherry
Red Onions
Dates
Pine Nuts

METHOD:

Sear salmon on the Plancha and finish in oven to desired temperature. In a sauté pan assemble the Catalane spinach and place in center of plate allowing the juice to pool on the bottom of the plate. Once salmon is done cooking top with alioli and place in salamander to crust. Set a top the spinach and finish with fresh herbs.
