Roasted Fish with Coconut-Curry Sauce


Serves 4

Ingredients for Sauce:

1½ cups unsweetened coconut milk
1½ tablespoons yellow curry paste
2 chopped serrano chili peppers
2 tablespoons fish sauce
2 tablespoons agave
1 tablespoon minced fresh ginger

Method for Sauce:

Combine all ingredients in a 1. small saucepan and bring to a boil. Lower heat and simmer for 15 minutes. Remove from heat and let cool for 20 minutes. Puree sauce in a blender until smooth.
