TN Cheddar & Benton’s Bacon Grit Bites

Ingredients for Grit Bites

2 cup Water
1 cup Heavy Cream
1 cup Instant Grits
1 cup TN Cheddar, shredded
Salt & White Pepper. to taste
1 Whole Egg
2½ cup Ground Panko
1 cup Cheddar, shredded
1½ cup Ground Benton’s Bacon, fully cooked crumbled

Method for Grit Bites

• Boil water and cream; add grits, salt and pepper, and cook until grits are done.
• Add cheddar and cool overnight.
• Add eggs, panko, cheddar and bacon to cold grit mix and mix with kitchen aid or hand mixer. (the mix should make firm bits with a little tackiness’ to it, add more panko to achieve)
• Form mix into small round balls and freeze all the way through.
• Coat frozen grit balls with flour, knock off excess flour by shaking in a strainer.
• Coat in buttermilk and then coat in ground panko and freeze again.
• Cook frozen bits in fryer at 350 degrees until golden brown.
• Serve with warm cheese sauce and garnish with crumbled bacon.
