Zucchini Fritters

NOTE:

We like to add goat cheese or a Greek Kasseri Sheep cheese because it makes them taste saltier and drier. Zucchini is full of fiber and it’s nutritious too. Leave a ½ hour for the zucchini to dry before assembling. These fritters are a great substitute for potatoes.

Ingredients for Zucchini Fritters

3 cups Zucchini, peeled & shredded (approx. 1½# zucchini)
2 Eggs
½ cup Flour
½ cup Hard Cheese, grated (parm, asiago, etc.)
1 tsp Celery Salt
Cracked Black Pepper, to taste
Vegetable Oil, for frying
Feta Cheese, crumbled, for garnish
Italian Parsley, chopped, for garnish
