Ingredients

• 6 cups cooked rice (cooked in chicken broth)
• 1/2 lb. Andouille sausage, diced
• 1 lb. medium shrimp, peeled
• 1/2 lb. crawfish tail meat
• 1 large tomato, diced
• 1 sweet onion, diced
• 1 red bell pepper, diced
• 1 yellow bell pepper, diced
• 2 celery sticks, diced
• 1/2 tsp Old Bay seasoning
• 1 tsp cajun blackened spice
• 1/2 stick butter
• salt, pepper and/or tabasco, to taste
