Braised Short Ribs

Ingredients for Braised Short Ribs

5 lb Short Ribs
4 oz Bacon slices, chopped
1 Onion, chopped
1 Carrot, chopped
3 ribs Celery, chopped
½ Pineapple, peeled, cored & chopped
4 cloves Garlic, smashed
1 cup Red Wine
2 cups Orange Juice
¼ cup Soy Sauce
4 cups Veal Stock
2 tbsp Oil
Salt & Pepper, to taste
4 cups Apple Cider
2 tbsp Butter

Method for Braised Short Ribs

• Heat the oil in a large pot.
• Season the short ribs with salt and pepper.
• Sear the short ribs on both sides, then place in a braising pan.
• In the same pot that you seared the short ribs, render the bacon.
• When the bacon starts to crisp, add the onion, carrot, celery, pineapple, and garlic.
• Season with salt and pepper.
• Sauté the vegetables for about 5 minutes until starting to soften.
• Add the red wine and reduce by about half.
• Add the orange juice, soy sauce, and veal stock. Simmer for about 15 to 20 minutes.
• Pour all contents of the pot over the short ribs.
• Cover and cook in a preheated oven at 350º for 3 hours.
• After this time the short ribs should be tender. Remove from the oven.
• Place the short ribs in a container.
• Strain the braising liquid into a stock pot.
• Add the 4 cups of apple cider to the pot and simmer until reduced to a glaze consistency.
• Stir in the butter.
