Ingredients for Tomato Pie

15 Red Vine Ripe Tomatoes
3 bunches Leeks, cut & cleaned
1 cup Mayonnaise
3 tbsp fresh squeezed Lemon Juice
⅛ cup chiffinade of Basil
1 cup shredded Mild Cheddar Cheese
Salt & Pepper, to taste

Method for Tomato Pie

• Roll out the pie dough and lay it in a heavily buttered pie pan. 
• Slice the tomatoes ¼” thick.
• Sauté the leeks until soft. Then allow to cool in refrigerator on a sheet tray.
• Mix cooled leeks, mayo, lemon juice, basil, and cheese.
• Add salt and pepper to taste.
• Place leek mixture first on the bottom of the pie dough, then place a layer of tomatoes.
• Repeat this process until there are five layers of tomatoes. • Roll out the top pie dough and place over pie. Crimp it’s edge.
• Brush egg over the top and score dough to allow steam to exit.
• Bake until the top is golden brown at 350º for about 20 minutes.
