Wreck Fish


Serves 4

Ingredients for Wreck Fish

4 each 6 oz Wreck Fish Fillets, sautéed
1 cup chopped Green Tomatoes
1/2 cup Sweet Corn
1/4 cup Blue Cheese Crumbles
1/4 cup Scallions, chopped
1 cup double strength Chicken Stock
1/4 cup Champagne Vinegar or Apple Cider Vinegar
1/2 cup Extra Virgin Olive Oil
2 tbsp Chives, chopped
Salt & Pepper, to taste

Method for Wreck Fish

• Sautee the fish fillets in olive oil.
• Core tomatoes and dice medium.
• Roast corn on the cob at 350 degrees for 20 minutes or until golden brown.
• Cut the corn from the cob and place in a bowl with diced tomatoes.
• Then add chopped scallions and chopped chives.
• Season with salt and pepper.
• Cover vegetables with warm double strength chicken stock and champagne vinegar, mix gently.
• Add the extra virgin olive oil and blue cheese, gently mix again.
