Ingredients for Pimiento Cheese Grits

Makes 6 cups
6 cup Water
1 ⅔ cup coarse stone-ground White Grits
½ cup Heavy Cream
1 tbsp Butter
1 cup Red Bell Pepper, roasted, peeled, seeded, & chopped
8 oz Sharp White Cheddar Cheese
½ tbsp Salt
1 dash White Pepper

Ingredients for Red Pepper Sauce

Makes 1 ¾ cups
1 tbsp plus 1 teaspoon Olive Oil
¼ cup Yellow Onion, roughly chopped
½ tsp Garlic, roughly chopped
2 tbsp all-purpose flour
1 ¼ cup Chicken Broth
½ cup Red Pepper Flesh (From 2 large roasted red peppers chopped, or 2 (4-ounce) jars pimientos, drained and chopped.)
2 tbsp Fresh Basil, chopped
Salt, to taste
1 pinch Cayenne Pepper
