Chicken Liver Terrine

Ingredients for Chicken Liver Terrine

1 lb Chicken Liver
1 cup Bourbon
¾ cup shaved Shallot
2 shaved Garlic Clove
2 sprigs Thyme
TCM, to taste
4 Eggs
1 lb of Brown Butter
Salt, to taste
White Pepper, to taste

Method for Chicken Liver Terrine

• Make sure the livers, eggs, and butter are at room temperature.
• Reduce the bourbon, shallot, garlic, and thyme until almost dry.
• Season the livers with tcm, salt, and white pepper.
• Purée the livers with the reduced bourbon.
• Add the eggs and emulsify in the butter.
• Cook in a 300º oven in a bain marie until the internal temperature is 156º.
