Chicken Rigatoni

Ingredients for Chicken Rigatoni

1/2 oz Clarified Margarine
1/2 cup Yellow Onion, diced
1/4 cup Shitake Mushrooms, sliced
6 oz cooked Whole Chicken Meat, pulled
1/4 cup Marsalla Wine
2 oz Chicken Stock
3 oz Heavy Cream
3 oz grated Parmesan Cheese
5 oz cooked Rigatoni

Method for Chicken Rigatoni

• Add margarine, then onions, to a hot saute pan. Cook for 2 minutes.
• Add mushrooms and cook for 1 minute.
• Add chicken and cook for 2 more minutes.
• De-glaze pan with wine and reduce by 1/2, reduce the heat by 1/2.
• Add stock, cream and cheese. Cook until simmering.
• Stir in rigatoni and place in a bowl for serving.
• Add your favorite hot garlic bread and enjoy!
