Ingredients for Ahi and Salmon Citrus Nigiri

• 1 lb steamed and seasoned Sushi Rice
• 5 oz fresh sushi grade Salmon
• 5 oz fresh sushi grade Ahi Tuna
• 1 oz Orange Juice
• 1 oz Lemon Juice
• 1 oz Lime Juice
• 3 oz Olive Oil
• 3 oz Sweet Soy sauce
• ½ oz Sriracha
• Salt & Pepper
• julienned and blanched zest of Lemon, Lime and Orange

Method for Ahi and Salmon Citrus Nigiri

• Spoon and mold the rice in 16 bite size quenelles.
• Slice the salmon into 8 thin slices. Repeat with the ahi tuna.
• Arrange each slice of fish on top of the rice quenelles.
• Make a vinaigrette out of the citrus juices, olive oil, salt and pepper
• Dress the nigiri with the vinaigrette.
• Drizzle the sweet soy sauce spiked with the sriracha and garnish with the citrus zest.
