Ingredients for Southwest Eggrolls

1/2 Can Green Chilies, small dice
1 Bunch Minced Green Onions
1/2 Bag Frozen Corn
1/2 Can Canned black beans, rinsed and drained
2 Cups Sauteed Spinach, Chopped
1/4 Bunch Cilantro, Chopped
2 Tablespoons Cumin
2 Tablespoons Chili Powder
1 1/2 Teaspoon Salt
1/2 Dash Cayenne Pepper
5 Cups Shredded Monterey Jack Cheese
1 Tablespoon Chipotle Peppers in Adobo, Pureed

Method for Southwest Eggrolls

• Combine all ingredients in a large bowl and mix until well incorporated. Adjust seasoning as needed.
• Place approximately 1/4 cup of filling in wrapper.
• Egg wash edges of wrapper and roll as tight as possible making sure roll is completely sealed.
• Drop rolls in 350-degree oil and fry for about 3 minutes until golden brown and heated through.
• Serve with your favorite dipping sauce
