Lobster & Shrimp Stuffed Cod

Serves 1

Ingredients for Stuffing

½ lb Lobster, raw, large dice ¾”
1½ oz Whipped Butter
½ tsp Salt & Pepper mix
½ lb Shrimp, 91/110
4 oz Three Cheese Sauce
½ oz Basil, chopped (fresh)
1 tbsp Lemon Zest (fresh)
1 tbsp Lemon juice
2 oz Panko

Ingredients for Lobster & Shrimp Stuffed Cod

1 6 oz Cod filet
¼ tsp Salt & Pepper mix
3 oz Lobster & Shrimp Stuffing
2 oz Water
5 pcs Asparagus
1 tbsp Olive Oil
2 oz Garlic Sauce
1 tsp Lemon Juice (fresh)
¼ tsp Chives, minced ½ tsp Brunoise Tomato

Method for Stuffing

• Season lobster meat with salt & pepper, then put on a sizzle platter and place under salamander and cook.
• Place cooked meat on a tray and cool in refridgerator.
• Reserve all excess liquid.
• Season shrimp with salt & pepper, then sauté in ¾ oz whipped butter.
• Place cooked shrimp on a tray and cool in refridgerator.
• Reserve all excess liquid.
• In a stainless bowl combine lobster meat, shrimp and all other ingredients until incorporated. Reserve.

Method for Lobster & Shrimp Stuffed Cod

• Cut a slit down the center of the cod filet.
• Season cod with salt and pepper.
• Place stuffing inside the slit and on top of the cod filet.
• Place on a sizzle platter with water and bake in the oven until cooked through.
• Sauté asparagus in olive oil, season with salt and pepper.
• In a small bowl mix together garlic sauce, lemon juice, chives and tomatoes then pour sauce onto a warm plate.
• Place asparagus in the middle of the plate with the tips pointing down towards the right.
• Place the cooked cod on the asparagus.
• Serve immediately.
