Lobster & Shrimp Stuffing

Ingredients for Lobster & Shrimp Stuffing

½ lb Lobster, raw, large dice ¾”
1½ oz Whipped Butter
½ tsp Salt & Pepper mix
½ lb Shrimp, 91/110
4 oz Three Cheese Sauce
½ oz Basil, chopped (fresh)
1 tbsp Lemon Zest (fresh)
1 tbsp Lemon juice
2 oz Panko

Method for Lobster & Shrimp Stuffing

• Season lobster meat with salt & pepper, then put on a sizzle platter and place under salamander and cook.
• Place cooked meat on a tray and cool in refridgerator.
• Reserve all excess liquid.
• Season shrimp with salt & pepper, then sauté in ¾ oz whipped butter.
• Place cooked shrimp on a tray and cool in refridgerator.
• Reserve all excess liquid.
• In a stainless bowl combine lobster meat, shrimp and all other ingredients until incorporated. Reserve.
