Moule Frites

Serves 12

Ingredients for Moule Frites

½ lb PEI Mussels
3 oz Buttermilk Blue Cheese
2 oz Slab Bacon, cut into ¼" cubes
2 oz Butter
1 small Shallot, diced
2 Garlic Cloves, minced
1 tbsp Fresh Parsley, chopped
French Fries or Grilled Bread
8 oz Amber Lager/Ale (not hoppy)

Method for Moules Frites

• Render slab bacon in 12" skillet.
• Add shallots. Sweat shallots for approximately 2 minutes.
• Add garlic and cook until fragrant, approximately 30 seconds.
• Add butter.
• Deglaze pan with beer.
• Add 2oz of blue cheese.
• Add mussels & cook until they open, about 2 minutes.
• Remove open mussels from pan & pour pan sauce over.
• Finish with salt and pepper to taste.
• Garnish with fries, blue cheese & parsley.
