Thai Seafood Fricassee with Vermicelli Noodles, Green Curry & Coconut Milk Broth,Shiitake Mushrooms

Serves 4

Ingredients for Broth

2 tbsp Fish Sauce
1 tbsp Brown Sugar
3 can Coconut Milk
2 tbsp Grated Ginger
2 tbsp Green Curry Paste
4 Lime Leaves
Salt & Pepper

Ingredients for Seafood Mix

1 3 oz cube of Halibut (per person)
2 U/10 Scallops (per person)
3 16/20 Shrimps (per person)
3 Mussels (per person) 6 oz Shiitake Mushrooms, julienne 4 oz Red Pepper, finely diced
3 tbsp Cilantro, chopped
1 tsp Garlic, minced
2 tsp Shallots, minced
Blended Oil

Ingredients for Noodles

8 oz Vermicelli Noodles, soaked

Method for Broth

• Add all ingredients in a pot and simmer for approximately 1 hour.
• Season to taste.

Method for Thai Seafood Fricassee

• Heat oil and sauté the minced garlic and shallots.
• Once they begin to caramelize, add the seafood minus the mussels and shrimps.
• Add shiitake mushrooms. Deglaze with the broth and let cook for 1 minute.
• Add the vermicelli noodles, mussels, and shrimps. Then cover until mussels open up.
• Neatly arrange all the seafood in a serving bowl (or individual bowls) then gently ladle in the broth over top.
• Garnish with chopped cilantro and brunoise of red bell pepper.
