Charleston Shrimp & Grits
Serves 4
Ingredients for Grits
1 cup Stone Ground Grits
3 tbsp Butter
2 cup Shrimp Stock
Salt & Pepper, to taste
Ingredients for Shrimp
2 cup Heavy Cream
½ cup julienned Red & Yellow Pepper
½ cup julienned Vidallia Onion
16 Shrimp 16/20 size, peeled & deveined
6 oz Andouille Sausage, sliced
1 tsp Garlic
3 tbsp Butter
1 cup Heavy Cream
1 tbsp Cajun Spice
Salt & Pepper, to taste
Method for Shrimp
• Melt butter, add sausage and brown lightly.
• Add peppers and shrimp. sauté until shrimp are pink.
• Add garlic and spices. sauté for 1 minute.
• Add cream and reduce until thick.
Method for Grits
• Follow package instructions.
• Cook on low temp until very thick.
• Stir often.
