Chicken Coconut Lollipops

Chicken Coconut Lollipops

Makes 16 Lollipops

Ingredients for Chicken Coconut Lollipops

1 lb Chicken, ground
1 Egg White
½ cup soft Bread Crumbs
½ cup Coconut, shredded
1 Scallion, sliced thin
2 tsp fresh Basil Chiffinade
1 tsp Chili Garlic Paste (optional)
½ tsp Salt
16 Lollipop Sticks

Method for Chicken Coconut Lollipops

• Place the bowl of your mixer in the freezer for 5 minutes while gathering ingredients.
• Preheat oven to 325º.
• Pull the bowl out of the freezer.
• With a paddle attachment, mix the ingredients until well blended.
• Form the mixture into 16 oval patties and place on a cookie sheet. Bake for 5 minutes.
• Remove the sheet tray from the oven. Turn each patty and continue cooking the second side for 5 minutes.
• Remove from oven. Cool for 3 minutes.
• Push the lollipop sticks into each patty.
• Serve warm with the peanut dipping sauce.

Peanut Sauce

Ingredients for Peanut Dipping Sauce

⅓ cup Rice Wine Vinegar
⅓ cup Sugar
⅓ cup Light Soy Sauce
1 tsp Chili Garlic Sauce
¼ cup Peanut Butter
1 Lime, zest & juice

Method for Peanut Dipping Sauce

• Bring the rice wine vinegar and sugar to a simmer. Continue cooking 1 minute, or just until sugar has dissolved.
• Place the vinegar mixture and remaining ingredients in a blender and blend until smooth.
