Ingredients for Carrot Soup with Curry & Honey

12 Carrots
1 tbsp Curry Powder
1 tbsp Extra Virgin Olive Oil
Salt & Pepper, to taste
1 ½ Onion
1 tbsp Garlic
2 tbsp Shallot
1 cup White Wine
1 qt Chicken Stock
½ cup Honey
2 cup Half & Half

Method for Carrot Soup with Curry & Honey

• Roast at 350º for 20 minutes, the carrots, curry powder, extra virgin olive oil, salt, and pepper.
• Sauté aromatics until transparent.
• Deglaze with white wine, reduce au sec.
• Then add the carrots, chicken stock, half & half, and honey. Cook until the liquid is reduced by half.
• Blend until smooth, adjusting the seasoning to taste.
