4 Onion, Honey & Ale Soup


Makes Approximately 16 Cups of Soup

Ingredients for 4 Onion, Honey & Ale Soup

1 each Yellow Onion
1 each Red Onion
1 each bunch of Leeks, white part only
5 each Shallots
2 tbsp Unsalted Butter
1 gallon Beef Stock
½ cup Honey
1 tbsp Rosemary, fresh & minced
12 oz Fat Head’s 3 Crowns
1 tsp Garlic, minced

Method for 4 Onion, Honey & Ale Soup

• Slice the onions, leeks, and shallots into 1/4” thick slices, and sauté in butter over low heat for 30 minutes.
• Add honey to it and cook for another 15 minutes.
• Add the garlic and rosemary and cook for several minutes to release the flavor.
• Pour in the beer and cook for 5 minutes.
• Add in the beef stock and bring to a boil for 5 minutes. Then reduce the heat to a simmer for 15 minutes.
• Remove from the heat and it’s ready to serve.
