Ingredients for Mahi-Mahi

• 4 6 oz portions Mahi Mahi, skin off (always buy fresh!)
• 1 stalk Lemongrass, fresh
• 2 tbsp Soy Bean Oil (or canola oil)

Ingredients For Pineapple Rice

While the fish is cooking, you should make your rice “mixture”.

• 24 oz Cooked Rice (dry is better)
• 1 tbsp Shallots, brunoise
• 2 cloves Garlic, smashed
• 1 ½ tbsp Soy Bean Oil
• ¼ cup Ponzu
• 1 cup Pineapple, freshly diced 1/4”
• ¼ cup Cilantro, fresh and roughly chopped
