London to New York Strip with Porter Braised Shallots


London to New York Strip Ingredients

New York Strip steak(10-12oz) – 1ea
Stilton cheese (rind removed) – 2oz
Porter Braised Shallots (recipe follows) – 4oz
Kosher Salt and Coarse Ground Black Pepper- as needed
Reserved bacon fat or oil – as needed

Method for London to New York Strip Ingredients

• Season steak liberally on both sides with salt and pepper applying pepper first then salt.

• Heat a medium skillet (preferably cast iron) over high heat until very hot. Add 1 tablespoon of bacon fat or oil to skillet followed immediately by steak.

• Sear steak on both sides approximately 1 minute each side. Transfer steak to preheated grill or broiler. Alternately steak can be finished in skillet in a preheated 450 F oven or on stove top over medium heat.

• Cook steak to desired doneness approximately 6-12 minutes. When steak has neared desired temperature place Stilton cheese on top. After cheese has begun to melt remove topped steak to plate and set aside in a warm place to rest.
