Grouper Bianco

Yields: 1 serving

Ingredients

1 8 oz. filet of black grouper (or substitute other fish)
flour
eggs
italian bread crumbs
vegetable oil
1/4 t shallots, finely chopped
1 T green onions, chopped
1 T butter
white wine
1/2 C clam juice
1/4 qt heavy cream
1 C Romano cheese
lemon juice

Method

  • Dust grouper with flour and drop in egg batter, then cover with Italian bread crumbs.
  • Pan fry in vegetable oil until golden brown on both sides.
  • Strain oil from pan. Add shallots, chopped green onions and butter.
  • Deglaze with white wine.
  • Add clam juice.
  • Bake in 500 degree oven for 6 to 8 minutes.
  • Remove fish from oven and plate; reserve mixture.
  • Add heavy cream, Romano cheese and a dash of lemon juice to mixture.
  • Reduce to desired thickness.
  • Pour mixture over grouper and serve. Enjoy!
