Macadamia Crusted Red Snapper with Mango Papaya Salsa

Ingredients Needed:

For Salsa:
- 1.5 Red Peppers, 1/4" diced
- 3/4 Ripe Mango, 1/4" diced
- 3/4 Papaya, 1/4" diced
- 2 Green Onions thinly sliced
- 1 tsp minced garlic
-1/2 minced jalapeno
1/4 cup of chopped cilantro
1.5 TBSP fresh lime juice
1 TBSP Rice Wine Vinegar
1 TBSP Olive Oil
Salt and Pepper to taste

For Snapper:
2 Eggs
5 Snapper Filets
2 cups macadamia nuts finely diced

Preparation:

- Combine Ingredients for Salsa, stirring to blend. Season with salt and pepper to taste.
- Dredge snapper in flour, dip in eggs and dredge in macadamia nuts. Placed dredged snapper on sheet pan and bake at 350 degrees for 10 minutes
Divide the salsa onto plates and top with fish. Garnish with cilantro.
